Pork and Sauerkraut
Description
My mother, AnnaBelle Butler, used to make this dish and my husband loves it!
add to shopping list Ingredients
6 to 8 pork country-style ribs
1 jar sauerkraut
salt and pepper to taste
Preparation
Wash ribs and pat dry. Place ribs in a row in bottom of 13" x 9" baking pan. Cover with foil. Bake at 325 degrees for 1-1/2 hrs. Drain off juices. Place sauerkraut on top of ribs and return to oven for another 1/2 hr. Serve with a side of applesauce!

I have been making this for about 40 years and it's still one of my favorite things to eat. Sometimes I use spare ribs or pork steaks, but country ribs seem to be the best. Your post reminded me it's time to make this again.
By the way, I found that cooking this dish in the slow cooker makes it so moist and keeps the liquid from evaportating. 3 hours on high, 4-5 hours on low does it.
I fix them this way alot but I add a little finely chopped onion, a little bacon, and a little shredded potato to the kraut. I have always made my kraut this way.
Thanks, I never knew quite how to prepare "Country Ribs" to get them tender. I used the "Pork & Sauerkraut" recipe but substituted barbecue sauce for the sauerkraut...they were delicious. Perhaps in the winter I will try them with the sauerkraut.
