Pork Chops and Rice

This recipe was my Mom’s and was something that she whipped up quickly after a long day at work. It is very easy to make and doesn’t cost much either (buy the pork chops in bulk, and freeze what you don’t use). This meal is a nice change from the normal chicken or beef recipes and kids will actually eat it too. Add some veggies in with it or spice it up with your own seasonings…it is very versatile.

4 bone-in pork chops
3 cups 30 minute white rice
1 can cream of mushroom soup
1 cup milk
2 cups water
Seasoning salt
Salt and Pepper to taste

Preparation

Pre-heat the oven to 350 degrees. In a large glass baking dish, or non-stick metal dish, mix soup, water, and milk. Stir together until fully combined and there are no large lumps. Stir in rice. Season with salt and pepper and mix in. Take pork chops and season with seasoning salt on both sides. Sit the pork chops on top of the rice mixture, press down so sides are submerged in sauce. Cover with foil and place in oven.

After about 20 minutes check to see if the sauce is bubbling and the rice is starting to soften. If the rice is almost done and has soaked up most of the soup, then check to see if the pork chops are done. If the pork chops need more time then you may need to add a little more water into the rice so it does not dry out. Stir some water in and mix in with the rice around the pork chops. Once they look like they are about done, remove the foil and allow the rice and pork chops to brown a little on top.

Now you are ready to serve. I always serve mine with peas and I add a little pad of butter on top of my rice. You could also add cheese..yum!

This was horrible. The 30 minute rice does not cook in 20 minutes. 3 cups of rice was way too much so I only put 2 cups in there and there was still not enough soup. The pork chops were tender though but I had to take them out or they would have been over-cooked.
