Pork Fillets Marinated in White Wine
Description
I often enjoy cooking with wine. The aromatic quality of wine enriches any meal. This dish of pork fillets sauteed with onion, sage and mustard is perfectly complemented by a dry white wine.

1 medium Red Onion
1 tablespoon sage
5 pork fillets
1 tablespoon Olive Oil
1/2 c dry white wine
2 teaspoons Dijon mustard
3/4 c chicken stock
Preparation
1. Finely chop the red onion and sage.
2. Season the pork with salt and pepper.
3. In a large skillet, heat olive oil over moderately high heat and saute the pork. Cook the pork for 2 minutes on each side. Remove the pork and add the red onion and sage to the skillet. Saute, stirring for 1 minute.
4. Add wine and simmer until reduced by half the size, 4 minutes.
5. Stir in mustard and stock and continue to simmer until thick, 4 minutes.
6. Serve pork with sauce, sauteed spinach and Quinoa.
