Potato and Ham Chowder
Description
This was thrown together for lunch in a mere 30 minutes. I had several leftovers - I've listed which components were leftovers.
add to shopping list Ingredients
1/4 cup bacon grease (leftover - frozen)
1 small onion - diced
2 cloves garlic - minced
2 cups ham (leftover turkey ham)
3 cups potato - cooked and diced (leftover)
2 cups mashed potato (leftover)
8 cups chicken stock
1 cup Heavy Cream
Preparation
Heat bacon grease in a large stock pot and add onion. Cook until onion is translucent.
Add ham and cook until well heated through.
Add garlic and chicken stock. Simmer for several minutes.
Add both potatoes and stir well. Simmer for several minutes, stirring frequently.
Add cream, stir well and heat through.
You really shouldn't need salt in this with the bacon grease and ham added, salt if you'd like, though.
