Potato, Leek and Stilton Soup
Description
This is just a lovely tasting, heartwarming soup which I would like to share with you all. Serve with lots of your favourite crusty breads, Yummy!

1 chicken stock cube
1 pint hot water
100ml white wine
1 medium leek, thinly sliced
1 shallot, finely chopped
2 cloves of garlic, finely chopped
1 very large potato, peeled and finely chopped
125g strong stilton
125ml Double cream
Salt And Pepper
Preparation
Add the stock cube, water and wine into a pan and bring to the boil. Add the leek to the pan with the shallot, garlic and potato. Cover and cook for 10 mins.
Add the stilton and cook for 4-5 mins to melt the cheese. Add the cream, salt and pepper and blend.
Serve the soup hot with bought or home-made croutons and lots of your favourite bread. Enjoy!
