Pulled Pork Sandwich
Description
Pulled Pork Sandwiches are one of my favorite things to order at a barbecue restaurant. The moist pork mixes with the tangy barbecue sauce to create a taste combination to die for. I wanted to know how to duplicate that taste at home. What I found out is that the secret behind great, moist, pork is to cook it at a low temperature for a long time. One of my friends found this awesome recipe on one of her favorite blogs (Pots and Pins, if you want to check it out), and passed it on to me. This pulled pork rivals some of the best restaurants out there! Pop the ingredients in the crock pot, go about your business, and before you know it you have a delicious meal.

4 to 5 pound Boston Butt Pork Roast, fat left on
1 large yellow onion, chopped
1 cup barbecue sauce (your favorite)
Salt and Pepper
8 sandwich rolls
Preparation
In a crock pot, place half of the onion on the bottom, turn the setting to high. Season the roast on all sides with salt and pepper. Place the roast on top of the onions and sprinkle remaining onions on top. Put the lid on the crock pot and allow to cook for about 6 hours. After that time, remove lid, and carefully drain any liquid. Using two forks, shred the pork into small pieces. Stir in barbecue sauce, taste, and adjust seasonings if needed. Place a generous portion onto a roll and enjoy. I like to serve mine with pickles.
