My Mother used to always make these bars for Thanksgiving instead of the classic pumpkin pie. They were always my favorite. The cream cheese frosting is really what makes them awesome. Try this quick dessert recipe whenever you have company coming over, it will be sure to be a hit!
Bars:
4 eggs
2 cups sugar
1 cup oil
15 oz. can of pumpkin puree
2 cups flour
½ teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon ginger
½ teaspoon ground cloves
½ teaspoon nutmeg
Frosting:
1/3 stick of butter
3 oz. cream cheese
2 cups powdered sugar
1 teaspoon vanilla
1 tablespoon milk
Preheat your oven to 350 degrees. In a mixing bowl, combine eggs, sugar, oil and pumpkin. Mix well. In another bowl, mix together your dry ingredients. Slowly add the dry ingredient mix into the wet mix. Stir well until fully combined. Pour into a 13 x 9 baking pan (greased). Bake for about 20 minutes. Remove from oven and allow to cool for a few minutes.
Frosting:
Mix all the ingredients except for the sugar. Slowly add in your sugar and mix well. Once finished, spread over the cooled pumpkin loaf. Cut into squares and serve. Enjoy!
We haven't eaten them yet, but they smell wonderful. One thing, though. I have a fast oven and after the 20 minutes bake time called for, we had hot, raw batter in the pan. It took a full 35 minutes bake time in a 13 x 9 pan.
will try this, but can't resist adding a bit of cinnamon because I love cinnamon in pumpkin, even in all things pumpkin
