Pumpkin Pie Fudge
Description
A great fall fudge to share with friends and family. If you like pumpkin pie and you like fudge, you'll love this marriage of the two! Let the kids chip in by helping to stir--they'll be fascinated by the boiling and change in texture as the fudge cooks.

2 1/2 cup Sugar
2/3 cup evaporated milk
3/4 cup pumpkin puree
1/2 tsp cinnamon
1/4 tsp each Ginger, nutmeg, and cloves
1/8 tsp Allspice
4 cups mini marshmallows
2 TBSP butter
1 cup White chocolate chips
1 tsp vanilla
Preparation
Grease a 9 x 13 pan with butter or other solid shortening and set aside. Stir together sugar and evaporated milk in a medium-sized saucepan, and bring to a boil over medium heat. Add pumpkin and spices, and bring to a boil again. Stir in marshmallows, bring to a hard boil, and cook--stirring occasionally--for 18 minutes. Remove from heat and stir in white chocolate chips and vanilla until all the chips are melted. Pour into prepared pan and let cool.
