Quick and Easy Broccoli Soup
Description
This soup is as easy as it is delicious! It is calorie reduced as it doesn't have cream in it, but it still has a creamy texture and plenty of flavour!

1 tbsp butter
2 Onions, chopped
2 potatoes, chopped (peeled if preferred)
2 cups vegetable stock
salt and pepper to taste
3 cups broccoli, fresh or frozen
1/2 cup milk
2 tbsp fresh chives or green onion
1/4 cup parmesan cheese (optional)
Preparation
In large saucepan, melt butter over medium heat; cook onions and potatoes, stirring often, until onions are softened, about 10 minutes. Add stock, salt and pepper; bring to boil. Reduce heat to medium; cover and simmer until potatoes are tender, about 15 minutes. Add broccoli pieces; cover and cook for 5 minutes.
In food processor or blender, puree soup until smooth. Return to pan; stir in milk and heat through. Serve sprinkled with chives.
If you're not concerned about adding a few extra calories put in a 1/4 cup of Parmesan when you add in the milk!
