250 g cooked and peeled prawns 1 can coconut milk 1 green pepper 1 tablespoon green curry paste 1/2 can of bamboo shoots 1 tablespoon peanut butter 1 onion fresh ginger Basmati rice salt and pepper olive oil
Preparation
- chop up the onion and the pepper
- put some oil into a pot and shallow fry the onion and pepper
- chop up some ginger and add it to the pot
- add the prawns and the bamboo shoots
- add the curry paste, peanut butter and coconut milk
- simmer it for some minutes
- season to taste with salt and pepper and serve with Basmati rice
