My grandfather taught to how to make pasta dough when I was a girl. I later learned how to make raviolis. This is one of my grandfather's favorits things.
Filling:
2 cups shredded beef
1/4 cup parmesan cheese
2 Tbsps minced garlic
salt and pepper to taste
Pasta:
2 1/3 cups all purpose flour
1/2 tsp. salt
2 to 3 beaten eggs
1/3 cup water
1 tsp. olive oil
Ready made pasta sauce
Prepare pasta: In a large mixing bowl stir 2 cups flour and salt(basil or oregano may be added). Make a well in the center of flour mixture. In a small mixing bowl combine eggs, water, and oil. Add to flour mixture and stir until well mixed.Knead the dough. On a clean surface spread the remaining flour. Place 1/2 of the dough on the floured surface and roll out to 1/4 inch thick rectangle. With a pastry cutter, cut the dough into 1in. by 1 in. sguares.
Place 1 rounded Tbsp. of filling on each square. Roll out the remaining dough to 1/4 inch thick. Cut to 1in. by 1 in. again and place on top of the filling and press each square together with the edge of a fork.
In a large pot, boil 1/2 gal. of water with 2 Tbsps. oil. Add the raviolis and boil until they float to the top. Place in heated pasta sauce of choice and garnish with parsley flakes.
