These simple wraps are a perfect change of pace from the normal sandwich. Creamy Thousand Island dressing and Gruyere cheese give it the Reuben flavor but since it is made with turkey, it is much healthier. Try it with some baked potato chips or a side salad, and you have a quick meal that is great tasting and great for you!
2 cup(s) coleslaw mix
1 cup(s) shredded carrots
2 tablespoon(s) cider vinegar
6 tablespoon(s) Thousand Island dressing
4 whole-wheat or multigrain tortillas or sandwich wraps (8-inch)
4 leaves romaine or butter lettuce
8 thin slices turkey
8 thin slices Gruyere or other Swiss cheese
In a bowl, toss coleslaw mix, carrots, cider vinegar, and 2 tablespoons of the dressing until combined.
Spread each wrap with 1 tablespoon of the remaining dressing. Line each wrap with a piece of lettuce. Place 2 slices of turkey on top of dressing in center. Place 2 slices of cheese on top of turkey. Top with about 1/3 cup of the coleslaw. Roll up burrito-style, tucking in sides.
