Roast Turkey Breast with Spiced Cherry Sauce

This a wonderful holiday entree for the entire family.

1 turkey breast, 4-6 lbs.
1 can pitted dark cherries
1/4 cup sugar
2 Tbsps. cider vinegar
1/8 tsps. ground cloves
1/2 tsp. cinnamon
1-1/2 Tbsp. cornstarch
2 Tbsp. brandy, optional

Preparation

Preheat oven to 325 degrees. Place turkey breast in a rack in a shallow roasting pan. Cook for 1-1/2 to 2-1/2 hours.(170 degrees)
While turkey is roasting, combine all but 3 Tbsps. of cherry liquid, sugar, vinegar, cloves, and cinnamon. Bring to a boil in a small saucepan. Reduce heat and cook for 10 mins. Mix reserved cherry liquid with cornstarch, add to hot liquid, stirring constantly. Stir in brandy if desired. Add cherries and heat thoroughly.
Remove turkey and let stand for 10 mins. Remove skin from turkey breast and slice. Serve 2 Tbsps. of cheery sauce on each slice.
It's great served with twice baked potatoes, california vegetables and sherbet for dessert.
