Roasted Sweet Potatoes
Description
Sweet potatoes are not just for Thanksgiving anymore! Try these simple roasted sweet potatoes with any main course and you will be wishing the holidays would come a little sooner. These are sweet, like the gooey marshmallow covered kind, but not as bad for you since we use fresh honey to sweeten instead. Toss them up, throw them in the oven, and forget about them for an hour. Enjoy!

2 pounds red skinned sweet potatoes
2 tablespoons Olive Oil
2 tablespoons honey
1 teaspoon Lemon Juice
½ teaspoon salt
Fresh chopped rosemary
Preparation
Preheat your oven to 350 degrees. Peel and cut potatoes into chunks, about 1 inch. Toss with olive oil, lemon juice, and seasonings. Pour into a baking dish and place into the oven. Cook for about 60 minutes. Stir occasionally to promote even cooking. Serve warm.
