Ron's Special Spicy Cornbread
Description
I was in charge of making the stuffing for thanksgiving a few years back and was looking to put sone wow into an old cornbread recipe I've used for years anytime I make cornbread and my brother is coming I have to double the recipe! Anyway, this is my humble offering to all these great recipes here.

1 1/4 cups all purpose flour
3/4 cup yellow corn meal
1/4 cup sugar < > to taste
2 tsps baking powder
1/2 tsps salt optional
2 eggs
1 cup french onion dip
1 bunch Green Onions
3 med to large jalapenos
1 cup coarsly shredded cheddar cheese
Preparation
Preheat oven 400º
Spray 8" or 9" pan with nostick spray
Using a large bowl mix all dry ingredients
Clean onions and cut off top inch or two of the greens
Chop onions into two or three pieces and put into food processer
Remove stems from jalapenos slice longwise (if you want it hot leave all the inside ribs and seeds; for warm ... only use seeds and ribs in one of the peppers)
Add jalapenos to processer with onion's top green stems, and pulse till finely chopped
Add eggs and dip into dry ingredients mix til smoothe and consistentcy of pancake batter then mix in the onions, jalapenos and cheese
If batter is too stiff add a splash of milk and mix awhile longer
Pour batter into prepared pan and bake @ 400º for 20-25 minutes until golden brown and tooth pick comes out clean
Let stand 5 minutes before cutting (if you can)
Serve warm with butter
Yield is 9 servings
great with any stews and most soups, or yse as a stuffing base as I do
