Salmon Crouquette

this is a good dish for appetizers or great as a main dish with rice and a lite salad, steamed vegetables, or vegetable soup( succotash for me).

1 16 oz. can of salmon
8 crackers ( crushed )
1/4 cup flour
1 to 2 tablespoon corn meal ( self rising if u like )
1/3 bell pepper minced
1/2 onion minced
2 eggs
2 teaspoon Lemon pepper
salt ( to taste)
1/3 cup corn oil
1/2 tablespoon butter

Preparation

first wash hands thoroughly. mince onions and bell peppers place in a bowl. wash hands again, open and drain salmon, once drained place salmon on a plate and remove bones.Mix salmon into bowl with veggies add dry ingredients then eggs and mix well. Once mixed heat a fry pan with corn oil and butter spoon salmon mixture in to pan fry until golden brown and flip fry until golden brown and remove from skillet. serve with dressing of choice( I use one made from home ).
