Sam's Chicken Tortilla Casserole
Description
This is a friend of the families casserole that she made for a card playing party. My son begged me to make it again. This is an addictive casserole. This is also a hide the vegetable casserole. Which is great for children and picky husbands.Use your imagination when making the tortilla stuffing and play around. You will come up with a keeper that your family will love.When Sam made this she did not put the mushrooms or garlic in it. My kids came up with this addition. This can be scaled up or down depending on your needs.

3 boneless chicken breast or 2 small cans of chicken
1 small jar alfredo sauce
1 regular size jar spaghetti sauce
1 package tortillas (size is up to you)
1 clove garlic
1 can mushrooms-drained
1 tablespoon vegetable oil
salt and pepper to taste
2 cups favorite shredded cheese
Preparation
I started out by cubing up the chicken into bite size pieces. I them placed the oil into a skillet. I added the chicken, garlic and mushrooms. I cooked this until the chicken was done all the way thru. I then added the alfredo sauce to this and seasoned to taste. I put a little of the spaghetti sauce into the bottom of the casserole dish. I then stuffed the tortillas with the alfedo sauce and placed them seam side down. I covered the tortillas with the rest of the spaghetti sauce and topped with cheese. I baked it about 30 minuets at 350 or until the cheese is melted and the sauce is bubbley around the edges.

Thanks so much for this recipe. I made this the othernight and it was absolutely fantastic. I did tweak it a bit though. To make the tomato sauce I used a small jar of spaghetti sauce, a tin of diced tomatoes,a rinsed can of kidney beans, a packet of taco seasoning, a finely diced red onion and some cayenne powder to taste. I then simmered this for about 10 minutes, adding salt and freshly ground pepper to taste. For the chicken mix I sauted a large white onion, several garlic cloves diced and then cooked the chopped chicken with about 6 decent sized button mushrooms diced. I also added a bit more cayenne pepper, salt and pepper before stirring in the alfredo sauce. I found that by refrigerating the chicken mix it thickened up which was better for wrapping into the tortillas. Once I added the tomato sauce on top with the grated cheese, I also layered some sliced ripe tomatoes and it looked awesome. How did it taste? Like a mexican chicken tortilla taste bomb! We couldn't get enough and the kids absolutely loved it. I'm going to try a mince version of it tonight. I will post the recipe if it works out the way I have planned it!
I'll go for everything except the alfredo sauce in a jar. That is pretty nasty stuff, I think. I would probably use shredded parmesan mixed in with some ricotta cheese instead. This is the kind of casserole that I could seriously pig out on!!!
My family really enjoyed this... I think the next time I make it... which will be soon... I'm going to try a mild salsa instead of spaghetti sauce.
A can of cream of chicken soup, and a can of cream of mushoom soup instead of the alfredo sauce works wonderfully. Do not mix soup with milk. I like to add a small can of diced chili's to this also. No spaghetti sauce. Could use salsa instead.
