Sausage Gravy Egg Baskets

WOW! My ultimate goal when creating a recipe is to serve up what I call “The Wow Factor”. What is the “Wow Factor”? When my guests say “Wow!”, when they take their first bite then I know it’s a winner! This recipe does just that!

Preparation

Place oven racks in middle of oven. Pre-heat oven to 400 degrees.
In a large 12-inch non-stick saucepan brown and crumble over high heat 1 (16-ounce) package Honeysuckle White lean turkey breakfast sausage.
Once the meat is browned and crumbled, reduce heat to medium.
In a medium bowl stir together with a fork 2 ½ cups fat-free milk and 2 tablespoons cornstarch until the cornstarch is completely dissolved.
Pour into the browned sausage and stir well.
Add 1/8 teaspoon ground pepper, stir well.
Reduce heat to medium and stir occasionally.
Once the sausage gravy is thick, reduce heat to low, and cover to keep warm.
Slice 4 light multi-grain English muffins in half horizontally and place on a cookie sheet with the cut side up.
Place 1 slice of fat-free American cheese on each of the halves of the English muffins and set aside.
Spray 8 cups of a muffin pan with non stick spray.
Place one egg (without the shell) into each in the 8 muffin cups.
Place the eggs and English muffins in the oven and bake for 5 minutes.
After baking for 5 minutes remove the English muffins but leave the eggs in the oven to continue baking for an additional 5 minutes or until baked to a soft set stage.
For each serving: place a baked cheesy English muffin half on a plate. Place 1/3 cup of sausage gravy over each cheesy English muffin half.
Take eggs out of oven and remove from the muffin tin with a spoon, then place one baked egg in the center of the sausage gravy.
Serve immediately.

Oranges and grapefruit slices

Instructions to prepare suggested meal

Set timer for 30 minutes.
30 minutes before meal make this recipe.
10 minutes before meal put the eggs and cheesy English muffins in this recipe) in the oven to bake) and start the coffee or tea (if desired). Also slice 4 oranges and 4 grapefruit onto slices. Arrange on plates.
5 minutes before the meal remove the cheesy English halves from the oven and put on individual plates. Put 1/3 cup of the Sausage gravy on top of each Cheesy English muffin half.
1 minute before meal place 1 baked egg on the center of each sausage gravy covered English muffin.
