Sautéed Green Beans with Garlic

Here is a simple side dish to make to go with any meal. These green beans are crisp and full of flavor. Toss in some other vegetables too, if you like. For those of you watching your waistband, this recipe is healthy as well. Fast and healthy, what a combo...try it tonight!

add to shopping list Ingredients

1 pound of thin green beans(cleaned and ends chopped off)
1 ½ tbsp. olive oil
1 ½ tbsp. butter
1 clove of garlic, minced
Salt and pepper to taste
½ tsp. fresh lemon juice

Preparation

Boil water in a large pot, add in green beans. Boil for about 6 minutes and drain. Let sit in a bowl of cold ice water until cool (this helps keep the green color).

In a large skillet, heat your oil and butter over medium high heat. Add garlic and cook for a few minutes. You do not want it to burn so watch carefully. Add in your green beans, lemon juice, and salt and pepper. Cook for about 5 more minutes and remove from heat. Ready to serve!

I have never tried cooking green beans this way but it seems like they would still have lots of flavor and a little crunch. Writing fresh green beans on my shopping list.

When browning the garlic, toss in a handful of pine nuts. It adds a bit of nice crunch as well as being really good for you.
