Sauteed Spinach with Garlic
Description
Popeye taught us to eat our spinach at a young age, but if you were like me, you didn't start appreciating spinach until you were older. As a child I hated it and refused to eat it; now I love it. Spinach is one of my favorite side dishes because it is easy, goes with anything, and is also good for you. Oh yeah, Popeye had a good point when he said "Eat yer spinach". Spinach is loaded with vitamins, antioxidants, and iron among other things. So the next time you need a simple dish to accompany your main course, try this quick recipe. Your mouth and your body will thank you.

1 ½ pounds baby spinach
2 tablespoons olive oil
6 cloves of chopped garlic
2 teaspoons salt
¾ teaspoon black pepper
1 tablespoon butter
1 lemon
Preparation
Wash your spinach and pat dry until most of the moisture is gone. You can also use a salad spinner. In a large pan, heat the oil and saute the garlic for just a minute on medium heat. Add the spinach, salt, and pepper to the pot. Stir and mix with the garlic oil. Cover and cook for about 2 minutes.
Remove the cover and stir, turn heat up to high and cook for another minute uncovered. Keep stirring while it cooks. Once all the leaves are wilted, add butter and mix in. Remove from the heat. Sprinkle the spinach with fresh lemon juice and now you are ready to serve. Mmm!
