Savory Whole Wheat Flake Mix - Chivda
Description
This is a kind of "chivda" (savory Indian mix) that can be eaten as a snack between meals, served with drinks or along with appetizers. Different kinds of chivda are served during all festivals and celebrations in the state of Maharashtra and all over India. It can be made with flatten rice, corn flakes, puffed rice, lentils, etc. that are mixed with all kind of nuts, seeds and spices. You can make it as sweet, sour, salty or spicy as you like. I tried making it with whole wheat flakes (Kellogg's Special K) and while my hubby was a bit skeptical of this idea in the beginning, we ended up liking it very much.

1 cup whole wheat flakes
1 teaspoon black mustard seeds
6-8 curry leaves (optional)
1/4 cup Peanuts
1/4 cup Cashew nuts
1/4 teaspoon Turmeric powder
1/2 teaspoon red chili powder
1 lime/lemon
1-2 tablespoons Sugar
pinch of salt
oil/butter for frying
Preparation
1. Heat some oil in a pan and fry the mustard seeds just till they pop.
2. Add the curry leaves and fry for another minute. You can use either fresh or dried leaves. If you cannot get either, you can skip this step.
3. Add turmeric powder, mix it and fry for a moment.
4. Add the nuts and fry till they start browning. If you want to add any dried seeds or berries, add them now as well.
5. Add red chili powder, mix well, fry for one more minute and carefully squeeze in the juice of one lime/lemon. Add salt to taste.
6. Finally, add the flakes and sugar, mix it well till the flakes get evenly covered with the spices. Taste and adjust per your taste.
7. If the flakes you are using are thin, remove the pan from the heat right away. Otherwise, fry it for a couple more minutes.
8. Let it cool down and keep it in an airtight container.
