Scallops and Chorizo
Description
A delicious spicy Spanish Chorizo with Scallops finished with fresh minced parsley and a hint of freshly squeezed lemon to brighten the dish. Easy and so delicious! one of our favorite recipes at The Paris House. It has been adapted from a Nigella Lawson recipe

1/2 lb Spanish Chorizo
1 1/2 lbs large scallops
1 lemon ( juiced)
1/4 cup chopped fresh parsley
Preparation
1. Slice the Chorizo into thin rounds and add to a hot skillet that is on a medium heat, with a tablespoon of olive oil and sauté until crispy. 2. I then remove the Chorizo to a dish with a slotted spoon. 3. Add the Scallops to the pan and sauté until a lovely mahogany shade on both sides. 4. Add the Chorizo back to the pan with the scallops. 5. Add your lemon and parsley. 6. Season with a bit of freshly ground pepper taking care not to add too much salt because the Chorizo is salty. Serve and enjoy with a lovely crisp cold white wine.
