Shrimp, artichoke & pasta in a red sauce. Delicious and filling, with a side of grilled mozzarella sandwich.
Note* Your seafood department usually has large steamed cocktail shrimp. These are perfect to use, because they are not overcooked and all you will be doing for this dish is heating them and adding the sauce on top.
1 cup orzo pasta
1/3 pkg Angel Hair Pasta
1/2 jar marinated artichoke hearts
1/2 jar marinara tomato sauce
3 tbsp Garlic Powder
3 tsp dried oregano leaves
1/2 cup red wine
shakes Salt And Pepper
8 slices Italian whole wheat bread
1 pkg Mozzarella
1 stick butter
1/2 cup extra virgin olive oil
1 LB cooked shrimp shelled & deveined
1) Boil salted water for pasta.
2) Heat skillet on medium high heat and add salt, pepper, lots of garlic powder & 1/4 cup olive oil.
3) Add shrimp and artichoke hearts.
4) Cook orzo five minutes and then add the angel hair pasta for the remaining five minutes cook time.
5) Add marinara sauce, wine and more garlic powder. Heat up but only allow shrimp to warm up, (eat one to test temperature) about five to eight minutes.
6) High heat butter in pan, add cheese and bread sandwiches to grill until dark brown and cheese is melted. Shake garlic powder liberally on both sides.
7) Drain pasta retaining 1/cup pasta water to use to keep dish moist.
8) Combine sauce on top of pastas. Drizzle remaining olive oil on top. Grate fresh cheese on top. Cut sandwiches and enjoy.
