Shrimp Fried Rice

Submitted by:

Description

Fried rice is a staple at any Asian restaurant, and the great thing about it is that you can change it up to suit your tastes. Don't like shrimp? Substitute chicken, or beef, or fish; you can even just go with no meat. Throw in your favorite vegetables and you have a simple meal that is ready in under 30 minutes!

add to shopping list Ingredients

2 cups instant white rice (or brown)
20-25 small shrimp
1 onion (diced)
1 red pepper (diced)
1 can mixed peas and carrots (drained)
1 egg
1 clove garlic (minced)
ΒΌ cup soy sauce (optional)
2 tablespoons Oil

Preparation

Boil water for your rice and cook as directed. Set aside. In a large saucepan, saute your onion and pepper in a small amount of oil until softened. Add in your canned vegetables and heat through. Turn heat off and set aside. In another pan, cook your shrimp and garlic in some oil for just a few minutes, until shrimp are pink. Mix in vegetables. Stir well. Keep heat on and add your egg into the pan. Scramble quickly and incorporate with vegetable/shrimp mixture. Add in soy sauce and rice. Stir well. Serve hot.

The overall idea is great but the use of instant rice is an abomination. cook quality rice for a meal and make sure you have leftovers on rice, cover and store in frig overnite and use that rice for your fried rice. the quality will be more like asian restaurant style. and you will enjoy.

Sounds good but there's nothing fried in the fried rice. Weird.

I make a version of this occassionally but add crumbled bacon and use the grease from the bacon to sautee the vegs. Healthy? No. Tasty? Yes! What can I say? I am from the South where everything's better with bacon grease.

I agree with two of the above comments, at least! I, too, am from the South -- where we do love to use that bacon grease! (haha) Also, I do think that leftover "quality rice" (not instant) makes a really good fried rice recipe. You can use pretty much anything in this; so be brave!

This is recipe that I absolutely will make! For several years I have experimented with different varieties of garlic and would like to try this with a stronger kind and add some green onion with the other onion. :)
