Shrimp Mousse Spread
Description
I loved the simple, less complex, flavor that showcased the shrimp and the very mild touch of garlic. What a great summer dish. I'd recommend making it up early in the day and chilling it until lunch or whenever you want to use it. It was perfect on a seed covered cracker.

1 lb cooked, cleaned, shrimp
1/3 cup low fat mayonnaise
2 green onions, sliced
1/4 teaspoon Garlic Powder
fresh parsley to taste (optional)
salt and pepper to taste
Preparation
1 In a food processor, mix all ingredients until desired texture.
2 Add salt and pepper.
3 Serve with crackers or bread.
