Shrimp Scampi with Capers

There are few things I love more than pasta and seafood. Add them together and you have made me a very happy girl. This is one of my favorite pasta dishes because it is simple and elegant at the same time. Serve it for a romantic dinner with your loved one, or simply make it for a typical weeknight dinner. I like to make a fresh salad, and some crispy garlic bread to accompany this delectable main course. It will become one of your favorites too!

add to shopping list Ingredients

1 package of linguine pasta (about 8 oz.)
1/3 cup white wine
½ cup butter
¼ cup capers
1 ½ pounds shrimp, peeled and deveined
2 cloves of garlic, minced
2 tablespoons olive oil

Preparation

Boil water for your pasta and cook according to the package directions. Remove the pasta from the heat when still al dente. Drain and set aside. Reserve ½ cup of pasta water in a container.

In a large saucepan, melt your butter and add your olive oil. Reduce heat to medium low, and add your garlic. Saute until tender. Add your shrimp and cook for a few minutes (should turn pink). Stir in white wine and allow to cook for a few more minutes. Now add your pasta water, capers, and linguine. Mix well and cook for one more minute. Now remove from heat and serve. Garnish with grated Parmesan cheese. Dig in!

The flavors exceeded the simplicity of the ingredients. I substituted olive oil for the butter and added a topping of minced parsley. Just a note: you don't need to say "your" before an ingredient.
