SIcilian Fried Shrimp

4 lbs unshelled shrimp with heads on
1/4 cup Olive Oil
1/4 tsp salt
1/4 cup italian parsley chopped
2 large Garlic Cloves Minced
1 large or 2 small lemons juiced
Preparation
In a frying pan add the oil heat it up and toss the shrimp in it
Cook until shrimp has taken an orange color (do not overcook they get tough)
Remove from pan and place in a bowl toss all the other ingredients together with the shrimp and mix until completely saturated.
Serve while still hot

I have not eaten shrimp with the heads on. I read your story about the shrimp and your husband trying them on the beach. They look delicious.
