Simple Skillet Supper

This simple and inexpensive dish is a stove-top dream for busy cooks. With almost no prep and a cook-time of just 20 minutes, this simple skillet supper is the perfect way to get a hot meal on the table for your family on even the busiest night.

8 oz. lean ground beef or turkey
½ cup chopped onion
½ cup finely chopped celery
½ cup (2.5 oz. jar) sliced mushrooms, drained
1 1/3 cup quick cooking rice (such as minute rice)
1 (10 ¾ oz) can cream of mushroom soup
¼ cup green pepper, chopped
1 1/3 cups milk

Preparation

Spray a large skillet with nonstick cooking spray. Over medium heat, brown meat, onion celery, and green pepper for 10 minutes or until celery is tender. Add mushrooms, uncooked rice, mushroom soup, and skim milk. Mix well to combine. Reduce heat, cover and simmer for 10 minutes, or until rice is tender, stirring occasionally.
