This super-fast skillet meal has all the flavor of slow-simmered chicken cacciatore in less than half the time. Italian dressing is the secret to tender, flavorful chicken that may just be better than the original.

¼ cup Italian dressing
½ cup sliced onion
¼ cups sliced green pepper
16 oz. boneless, skinless chicken breasts cut into 1-inch cubes
2 tsp Italian seasoning
2 tsp. sugar
1 (14 ½ oz.) can stewed tomatoes, undrained
2 cups hot cooked egg noodles, rinsed and drained

Preparation

In a large skillet, heat dressing over medium heat. Add onion, green pepper, and chicken. Mix well to combine. Cook 6 to 8 minutes, stirring occasionally. In a small bowl, combine Italian seasoning, sugar, and undrained stewed tomatoes. Spoon tomato mixture evenly over chicken. Lower heat and simmer 12 to 15 minutes or until chicken is tender, stirring occasionally. Serve over cooked noodles. Note: To save time, boil the water for the noodles while you are prepping the rest of the ingredients. This way, the noodles can cook while you cook the rest of the meal. You can also use spaghetti noodles instead of egg noodles if you prefer.
