Skillet Chili

My husband doesn't like his chili "soupy", so I came up with this. Even my Dad likes it.

1 lb ground beef
1 can pinto beans, drain and rinse (optional)
1 small can V8 Spicy
1 quart tomato juice
1 small onion, chopped
1 small clove garlic (optional)

Preparation

Cook and crumble 1 lb of ground beef (I like ground beef that is 80/15, less fat to deal with), add chopped onion while cooking, also garlic. Add V-8 juice and tomato juice, simmer while you drain and rinse pinto beans (you can use into beans with onions, chili ready), don't drain this set-up and leave out the added onion. Cook to heat beans thoroughly. Serve.

*This is good with added onion and cheddar or colby cheese shredded on top. Also over spaghetti/pasta. You can also add crackers if you so choose. If you don't like a lot of spice, use regular V8 or even just tomato sauce. This is a dish to get creative with your spices and garnishments. Sometimes I will put either sour cream or cottage cheese in it if I am in the mood for chili but not as much acid from the tomatoes.
