Southwest Beef and Noodles

I came up with this skillet supper when my children were a bit older and had suddenly become picky eaters. They really liked the southwestern flavors and I liked the short ingredients list and cooking time!

1 pound ground beef
2 1/3 cups water,
1 Package Lipton noodles and sauce (your choice of beef, southwest or jalapeno flavor)
2 teaspoons chili powder
1 (12 oz.) can mexicorn (corn with sweet peppers), drained
1 can (12 oz.) diced tomatoes w/green chilies, drained
1 cup shredded cheddar cheese

Preparation

In a medium skillet, brown beef and drain. Add water and bring to a boil; stir in noodles and sauce mix, chili powder, corn, and drained tomatoes. Continue boiling over medium heat, stirring occasionally, about 7 minutes.
Add 2/3 cups cheese; simmer 5 minutes or until cheese is melted. Top with remaining cheese and serve with corn chips, tortilla chips, or corn muffins on the side.
