Spaghetti with Baby Spinach, Sun Dried Tomatoes & Figs
Description
This dish has a slightly sweet and yet unique flavor that is sure to help make for great dinner conversation.

1 pint fresh figs (cut in half)
2 bunches fresh baby spinach
½ cup sun dried tomatoes (chopped)
½ tsp. Red Pepper Flakes
2 vine ripe tomatoes (chopped)
2 tbls. Olive Oil
1 pat sweet unsalted butter
1 box Spaghetti
Preparation
In a large frying pan place the olive oil and butter and heat.
Place the figs in frying pan and sauté for about 3 minutes on each side remove the figs from the pan and set them aside.
In the same large frying pan place 2 tablespoons olive oil and add the spinach, tomatoes and the sun dried tomatoes and red pepper flakes. Sauté until the spinach has cooked down. When the spinach has cooked down add the figs and turn off the heat.
Prepare the spaghetti as directed on the box and add to the spinach and figs.
Serve with Romano cheese for garnish.
