Spicy Chicken Pitas
Description
Pitas are a fun way to make sandwiches. You can fill them with pretty much anything and you have a tasty meal in minutes. This spicy chicken pita recipe is great for weekday lunches because it is portable and all you need to do is pop it in the microwave for a few seconds. Yum!

2 boneless, skinless chicken breasts cut into small pieces
1 tablespoon olive oil
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ cup salsa (any kind you like)
Pita bread pockets
1 tomato, seeded and chopped
1 green onion, chopped
Preparation
In a skillet, heat your oil and add chicken. Cook until almost done. Add in all of your seasonings and salsa. Mix well. Reduce heat to medium/low and simmer for about 5 minutes.
Heat your oven to 350 degrees and place pitas on a baking sheet. Place into oven and cook for just a minute or so to make them warm and pliable. Remove from oven, break in half and fill with chicken mixture. Garnish with green onions and tomatoes. Some optional toppings are cheese, sour cream, avocado and lettuce.
