Spinach and Cheese Ball Appetizers

These are a delightful appetizer or snack that is sure to please.

Preparation

Preheat oven 350 degrees:

Drain spinach in a colander. Rinse with warm water until thawed: drain well. Squeeze spinach dry with a paper towel.

In a large bowl, mix egg, cheeses, garlic, oregano, black pepper, sour cream, oil and ricotta cheese until well blended. Add spinach to cheese mixture: mix well. Stir in flour, one cup at a time, until well blended.

Place bread crumbs in small bowl. Shape spinach-cheese mixture into 1 ½ inch balls using two teaspoons and place on a baking dish which has been greased with olive oil. Drizzle top of spinach balls with olive oil as well.

Bake for about 15 minutes, until bottom of spinach balls are slightly golden and then gently turn over and continue to bake for about another 15 minutes.
