Easy Way to Eat more Greens!

Preparation

Preparation:
Start chopping spinach finely and set aside. In a frying pan add the 4 Tbsp. oil and sauté onions for about 2-3 minutes. Set aside. In the meantime take a bowl and beat the eggs. Gradually add cornstarch, water, salt and nutmeg. Now, add the chopped spinach leaves, tomatoes, onions and Parmesan cheese. Combine all ingredients well. Put in the fridge for 10-15 minutes.

When ready pour oil into a no-stick frying pan – preferably—and heat up oil to medium-low heat. Using a Tablespoon drop in spoonful of the mixture. Fry for about 1 minute or until golden color underneath. Then turn and fry briefly the other the side. Drain on kitchen paper. Serve hot or warm.

I haven't made these yet -- love most of the ingredients -- but don't understand the 3/4c. of cornstarch. It seems to be way too much for the other ingredients and amount of liquid.
