Steamed Mussels with tomatoes, garlic and cilantro
Description
I have to admit when I buy Mussels I need to buy double the amount as even though I serve it as an appetizer, my daughters make a meal of it.

1 tbsp Olive Oil
1 finely chopped onion
5 Garlic Cloves
half bunch cilantro chopped
2 cups dry white wine
1 tsp Sea salt
1 cup bacon bits
3 diced tomatoes
3 # pounds of mussels
Preparation
In a deep large Sautée pan pour the olive oil and bring the temperature to medium hot
Add the garlic, bacon and onions
Add the wine and salt and bring the heat to medium low for about 5 minutes
Add the cilantro and tomatoes and cover
Again let it simmer for about 7 minutes then add the mussels and cover
The mussels will the ready to be served when opened
Enjoy with some fresh bread
