Grilled Strip Steak with Lemon-Thyme Butter
Description
Nothing is better than a big, juicy steak straight off the grill. I am a believer that steak should be lightly seasoned, for the most part. However, I love this recipe with the lemon-thyme butter on top of the steak. It is such a refreshing change of pace from the normal steak seasonings and sauces. Serve it with a baked potato and some fresh vegetables, and you have a well balanced meal.

4 New York Strip steaks, about 7 ounces each
1 teaspoon olive oil
½ teaspoon salt
½ teaspoon pepper
Lemon_Thyme Butter:
2 tablespoons unsalted butter
1 tablespoon lemon juice
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon fresh thyme leaves, chopped finely
Preparation
In a food processor, add all ingredients for the lemon-thyme butter. Mix until well combined and has a paste-like texture. Set aside.
Heat your grill and make sure it is very hot. Rub your steaks with olive oil and sprinkle with salt and pepper on both sides. Place them on the grill and cook for about 1 minute. Turn over and cook for another minute on the other side. Turn the steaks over again and finish cooking for an additional minute to a minute and a half. Steaks will be a medium rare. If you like them cooked well, then proceed to cook for another minute or two. When fully cooked to your liking, remove from the grill and spread lemon-thyme butter on top. Allow steaks to rest for a few minutes before serving.
