Summer Broiled Shrimp and Fresh Herbs

Submitted by:

Description

Fresh garden air, warm sunshine, cool wine and finger lickin' good broiled shrimp. Guess who is happy that it's summertime?

Preparation

Take the raw shrimp and lay it flat on the cutting board. Using scissors trim the top half of the tail shell away, leaving the bottom half.
On a broiler proof plate, pour 1/2" thick layer of the coarse salt, arrange the shrimp on the platter, with the shell side of the tail laying on the salt.
Drizzle with olive oil.
Finely chop your fresh herbs: parsley, marjoram, oregano, sage, rosemary, small clove of garlic.
Broil the shrimp.
Sprinkle with the herbs. Serve immediately with lemon wedges.

I'm coming over for dinner. Really, the table is set and the shrimp look so lovely. A welcoming sight.
