Sunshine Cake

Quick and easy and so delicious! Make ahead of time for a family gathering, pot luck dinner or to have on hand for those after school snacks for your kids!

Package of yellow cake mix
1/4 c. applesauce
4 eggs
11 oz. can mandarin oranges, undrained
8 oz. container frozen whipped topping, thawed
3.4 oz. pkg. instant vanilla pudding mix
15-1/2 oz. can crushed pineapple
Preparation
Combine first 4 ingredients together; mix well. Pour batter into a lightly greased 13" X 9" baking pan. Bake at 350 degrees for 30 to 40 minutes or until a toothpick inserted in the center removes clean; set aside to cool completely. Blend remaining ingredients together; spread over cake. Refrigerate until serving. Serves 16.
