600gr. pumpkin
3 tablespoons flour
2 tablespoons Sugar
2 tablespoons raisins
2 tablespoons pine nuts
1 / 2 cup Olive Oil
1 cup cider vinegar
1 clove garlic
5 leaves laurel
Preparation
* Clean the pumpkin by removing the skins and seeds. Wash meat, pat dry and cut into cubes of 1.5 cm. In a pot for steaming, bring to a boil 2 liters of water and when it boils, add salt. Put the diced pumpkin in the basket and cook for 15 minutes. Remove them from the basket and then pat dry with paper towels.
* Move the cubes in flour. In a large nonstick skillet, heat the oil and let fry the diced pumpkin for 10 minutes. Remove them with a slotted spoon and arrange on paper towels to remove excess grease. Season with salt.
* Soak raisins in warm water, drain and pat dry. In a pan, toast the pine nuts for 2 minutes, until they are golden. Place in a bowl and keep aside.
* Pour the vinegar into a saucepan, combine the sugar, crushed garlic and two laurel leaves. Add salt and pepper and bring to a boil. Let simmer for 5 minutes and then remove the garlic and laurel leaves.
* Place the cubes of fried pumpkin in a bowl and moisten founded with the mixture of vinegar. Distributed on the surface of the pine nuts and raisins and let it rest for at least 12 hours. Then garnish with the remaining laurel leaves and serve.
