Tilapia Mint cakes

Serve with yogurt as an appetizer

Or as the main course with some salad

Or make a fish burger by adding the pattie in a bun with lettuce, tomatoes and onion.

Replace Tilapia filets with Paneer(Indian cheese) to make Paneer Mint Cakes.

Preparation

Take tilapia filets in a microwave safe dish and add turmeric powder, chili powder and lemon juice. Microwave on high for 2-3 mins.

In a food processor add onion, green chili and ginger. Add microwave cooked tilapia and pulse 3 to 4 times to mix all the ingredients. You can also use a fork to mix all the ingredients in a bowl if you want to skip the food processor.

Add the rest of the ingredients except oil and pulse 2 times.

Take the minced mixture out from the processor onto a bowl and make small balls or shape into cakes.

Heat little oil in a pan and shallow fry the cakes/balls coated with bread crumbs on high heat till light brown.


Tip:
You can make cakes of 2-3 filets and allow them to cool down completely. Spread the extra cooked ones on a baking tray and freeze for 20 minutes. Take these frozen cakes and store in freezer storage bag in the freezer for up to a month.

Just reheat the frozen cakes in the microwave and serve.
