250 g ricotta cheese
2 Egg yolks
2 egg whites
2 tbsp sugar
1 C. coffee, slightly cooled
½ C. cocoa powder
Preparation
Preparation:
In a bowl whisk the egg yolks with the sugar until the mixture is creamy, add the ricotta cheese to the mixture and mix until well combined. In a separate bowl, add the egg whites and whisk until stiff. And gently incorporate the ricotta cheese mixture using slow movements until all incorporated.
Pour the coffee into a container and quickly dip the biscuits one by one, placing the first lining of 12 biscuits in a rectangular dish. Cover with half of the ricotta mixture and spread evenly. Dust with the cocoa powder. Repeat to make the second layer with the remaining ladyfingers and coffee mixture.
Top off with remaining ricotta mixture. Spread evenly and dust with cocoa powder. Place in the fridge for at least 2 hours before serving. –The Longer you leave it in the fridge the better the concentration of flavors and the Taste...well is absolutely out of this world—So it could be prepared o the night before.
