To Your Health Bran Muffins
Description
Simply outstanding bran muffins. I love, love,love that they use natural bran and not bran cereal with all of it additives. They aren't the giant ones you see that have tone of added fat. These are good for you and taste great.

2 1/2 cups cake flour
2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup Splenda Brown Sugar Blend
1/2 cup Splenda sugar substitute
3/4 teaspoon cinnamon
2 cups natural bran
1/2 cup raisins (or chopped dried apple)
1/2 cup egg white (or 2 whole eggs)
1/2 cup canola oil
2 cups fat free milk (skim)
1 teaspoon pure vanilla extract
Preparation
1 Sift flour, soda and salt together.
2 Add in both Splenda types, bran and raisins/apple.
3 Mix egg whites with oil, milk and vanilla essence.
4 Mix roughly into dry ingredients, mixture will be lumpy -- dont overmix.
5 Spoon into greased muffin pans. Fill each cup by approximately 3/4.
6 Bake at 350F for 20 minutes or until tester comes out clean.
