Tuna Pie
Description
One day in the 1970s I had a husband and 4 growing children to feed with almost an empy cupboard on a thursdau night(payday Fridays in those days)Fridays Egg and Chip day .so thursday was always a problem,i had many variations on Tuna Pie ,
but always seemed to find a few ingredience,to russel up something,we had Manchester Tart afterwards ,the Children loved it

500g Home Made Pastry
1 chopped fine onion
1 Tin Tuna mashed up
300g leftover mashed potato
3 tbL spoon tomato sauce
Sprinkle Salt And Pepper
50g Mature Gratted cheese
1 Beaten Small Egg
For The Leftover pastry
2 tabl sp jam
500g made up Custard
Sprinkle a litttle Gratted Chocolate or Coconut
1 for Manchester Tart Greased medium sized plate
1 For Tuna Pie Medium sized Pie dish
OVEN Marked 5 Gas
Preparation
Put your oven on mark 5 ,line a pie dish with your pastry .roll out the top,keep the scraps of pastry.
keep back Half the egg and sprinkling of the cheese but now
Mix all the ingredients together well.
Taste a little incase you need a little extra salt or Pepper .put the ingredience in to your pie case ,seal the lid down round the edges with a little of the egg,prick the top with a fork now brush the remaining egg over the pie and sprinkle remaining Cheese over top .you need to look after 30 min as some ovens cook faster than otheres ,if golden brown after 30 min ,its cooked but if in dout lay a layer of silver foil on top and put back in oven for 15 min ,this can be eaten hot,with baked beans or cold with Salad,
Use scraps of pastry left over .roll out cover a plate, spred with Jam.cook for 20 min take out of oven spred with custar .(home made or canned )sprinkle with the coconut or chocolate (Both if want to)Pop back in Oven for 15 min ,again Keep your eye on it this is an all in one pudding can be eaten hot or cold ,
