Twice Baked Potatoes

One of my husband's favorite foods is potatoes. I made my own variation of a twice baked potato. It's good for dinner for two.

add to shopping list Ingredients

2 medium russet potatoes
1/8 cup milk
1/4 cup butter
1/4 cup sour cream
1/8 cup crumbled bacon
1/4 cup shredded cheddar cheese
1 tsp. salt
1 tsp. black pepper
2 tsps. chives

Preparation

Preheat oven to 375 degrees. Bake potatoes for 30 to 40 mins. or until soft. Remove potates from oven. Cut each potato in half and spoon out the center of potato into a mixing bowl.
Add milk , butter, and sour cream. With an electric mixer, beat ingredients on low speed for 1 min. until mixed.
Add bacon, salt, and pepper. Mix until blended.
Places the mixture into the potato skins. You can use a pastry bag and decorating tip if desired. Bake again for 15 mins. or until slightly browned on top. When done, sprinkle with cheddar cheese and chives on each potato. This side dish is great with grilled salmon or filet mignon.

I cooked mine a little longer might just be my very old stove. other wise this was very good and we will make again.
