Veg Manchow Soup

This is basically a Chinese based soup which is healthy and yummy too.

1 cup Mixed Vegetables chopped
1 Onion - chopped
few Spring onions - chopped
3 tsp Cornflour
as per taste salt
1/2 tsp vinegar
as per taste White pepper powder
a pinch Ajinomoto (optional)
1/2 tsp soya sauce
2 tbsp tomato sauce
a pinch Orange Colour (optional)
1 tsp Oil
as required water
10-15 Red Chilli
1-2 Garlic pods
1-2 onion - roughly chopped
a small piece tamarind
to garnish Fried noodles*

Preparation

Grind together red chill, garlic, onion and tamarind. Keep it aside. Mix cornflour, vinegar, soya sauce, ajinomoto, tomato sauce, salt, white pepper and orange food colour in a bowl. Add little water, mix and keep it aside.
Meanwhile, heat oil in a kadai. Add chopped onions. Fry till golden brown. Add all the vegetables except spring onion and saute for 2-3 minutes. Add a tsp (or more if you want more spicy) of the grounded chilli mixture and mix well for another 5 minutes. When aroma arises, add 2 cups of water. Allow it to boil for sometime. Add the cornflour mixture and stir till it thickens. Add the spring onions and boil for 5 minutes on low flame. Garnish with fried noodles and serve hot. Yummy Veg Manchow Soup is ready.

*Fried noodles - boil the noodles, drain and deep fry.
