This super-fast, delicious vegetable soup is a snap to make even after a long day at work, chasing after your kids, errands, etc. Serve it with rolls or crusty bread, butter and fruit preserves and dinner is done!
1 ½ lbs. ground beef
1 small onion, chopped
Salt and pepper to taste
1 (10 ¾ oz.) can cream of celery soup
1 (10 ¾ oz.) can cream of mushroom soup
3 (12 oz.) cans V-8 vegetable juice
1 (10 oz.) pkg. frozen mixed vegetables
Brown ground beef and onions in a medium skillet over medium heat. Reduce heat; add
remaining ingredients and cook, stirring occasionally until vegetables are heated through.
Note: This soup freezes well.
