Veggie Stir Fry

Stir fry is easy to make when you are short on time and tight on money. Pick your favorite veggies and whip this meal up in a flash. This is a vegetarian version, but you could also add any protein that you like as well. Serve with some brown or white rice and you have a filling dish that is low on calories too!

add to shopping list Ingredients

1cup fresh broccoli florets
1 medium carrot (cut into thin slices)
1 cup shredded cabbage
½ small onion (cut into thin slices)
5 large mushrooms, sliced
½ teaspoon minced garlic
½ cup zucchini
½ cup snap peas
½ cup baby corn on the cob
1 cup cauliflower
½ cup cold water
2 teaspoons cornstarch
3 tablespoons light soy sauce
1 tablespoon vegetable oil
Steamed white or brown rice (or use instant)

Preparation

In a small bowl, combine water, cornstarch, and soy sauce and whisk until smooth. Set aside. In a large skillet or wok, heat your oil and add in carrot, onion, peas, and broccoli on medium/high heat. Cook for about 5 minutes. Add the remaining vegetables and cook until tender. Stir in sauce mixture and allow to cook for a few minutes on low, until thickened. Serve over rice. Dig in!
