Wayland Crab Cakes
Description
A very easy to make crab cake. These can be made big enough for sandwiches or small enough for appetizers. I made these out of crab legs that I bought on sale. They turned out better than the ones I have made in the past. I made this up off the top of my head from all the crab cake recipes I have read in the past. I used cajun seasoning in these as the crab legs already had it on them when I bought them.
add to shopping list Ingredients
2 pounds crab legs
1 small onion finely diced
1 small bell pepper finely diced
4 tablespoons Mayonnaise
1 tablespoon mustard-I used yellow
1/2 sleeve ritz cracker- crushed finely
4 tablespoons all purpose flour
to taste cajun seasoning
to fry in butter
Preparation
I shredded the crab meat into small chunks. I then added the crab,onion, pepper, mayo, mustard,cajun seasoning, and crackers. I mixed well. I then took the mixture and formed them into small patties. I dredged them in the flour and fried in a little butter until brown on both sides. (Make sure you only turn them once as they will try to fall apart if moved to much)

too funny, just finished eating store bought crab cakes and have been wanting to try to make them at home. Will be trying this recipe.
