White Chocolate Chip Lemon Cookies

White Chocolate Chip Lemon Cookies

These light, delicious cookies are perfect for spring and summer. Try making them with orange, lime, or grapefruit juice and zest instead!


1/2 cup (1 stick) butter, softened
1 cup granulated sugar
1 egg
1 Tbsp milk
1 tsp Lemon Juice
1/2 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup White chocolate chips
1 1/2 tsp grated lemon zest


1. Preheat oven to 350 degrees.

2. In a large bowl, cream butter and sugar with electric mixer until light and fluffy. Add egg, milk, lemon juice and vanilla; mix well.

3. Combine flour, baking powder and salt. Add to butter mixture; mix well. Stir in white chocolate chips and lemon zest.

4. Drop by tablespoonfuls or cookie scoop onto ungreased cookie sheets. Bake 12 to 15 minutes or until edges are a light golden brown. Cool 3 minutes in pan; remove and cool completely on cooling rack.
